The mail app on my macbook takes up a pretty big amount of memory though I never use it (use gmail).
I’ve looked online and tried various tips but nothing works - I’ve already deleted all emails from the app and un-enabled gmail.
Any ideas?

I don't think you can delete the app itself because of the system integrity thingie.

The downloaded mail data, although, is stored elsewhere. You can delete that. ~/Library/Mail/

Library is normally an hidden folder.
To go there, from Finder:

Go menu > Go to Folder...
(or press cmd + shift + G)

In the dialogue that appears, you can input:

YOURUSERNAME/Library/

I think the latest version of MacOS do autocomplete the paths, so easier.

Additionally, the free Omni Disk Sweeper app (from the Omni Group of course) will show you where larger chunks of data are on your computer, and gives a very easy way to delete it, in case.
You just have to be aware of what you are deleting.
